Spicy lemon zucchini swirls These spicy swirls of zucchini were something I made-up one day when I was bored. I got the inspiration off of Pinterest (click here_for my Pinterest snack board).
Ingredients 1 large zucchini (or more, depending on how many people) salt pepper smoked paprika powder chilli powder 1 lemon 1 tbsp butter (for pan)
Method Chop both ends of the zucchini off. Length wise, slice the zucchini about 1cm thick. Salt each slice and put aside for 15-20mins. Rinse each slice with water and dab dry with paper towel once it has been salted (salting it takes away the bitterness and helps draw out some of the water). For each segment, squeeze a quarter of the lemon on it. Then rub salt, pepper and a pinch of smoked paprika and chilli powder on each piece. Heat up the butter in a medium frying pan and place the seasoned slices of zucchini in it. When the zucchini starts to become a dark golden brown, flip over. Sprinkle some smoked paprika powder on a plate. Once both sides are dark golden, swirl each piece of zucchini, however you like, onto the plate you sprinkled paprika with. Season with some extra pepper, lemon and paprika powder and tada! A delicious snack!
